This recipe will easily feed a family of four.
What you will need:
(All ingredients available in ‘Nature’s Market’ at Wegmans, including the chips!)
1 Glass of wine 😜 🍷 (if you are old enough!)
1 pound organic (or locally raised) ground beef
2 jars organic marinara sauce
1 can organic kidney beans
1 can organic pinto beans
** for lower sodium, rinse the beans before adding
Spices: chili powder, paprika, cayenne (to taste)
3 cloves of garlic, crushed and diced
1 diced onion (we used a sweet white onion)
Diced hot peppers (we used jalapeño, but any fresh hot peppers will work)
Cheese + sour cream for topping
Off The Cob Sweet Corn Chips
Add olive oil to a cast iron pan and add beef. Season with a dash of salt and pepper. Add onions and garlic. Keep it moving until the meat is done.
Grab a big pot and add both jars of marinara sauce. Put on low heat.
Add beef, beans, and seasonings-to taste. (We started with 5 tablespoons of chili powder, and just a dash of cayenne and paprika)
Add diced peppers last, and let simmer. Keep tasting and add more spices or peppers if needed.
Simmer on low and stir for 40 minutes to an hour.
Serve with shredded cheese and sour cream.
Use Sweet Corn Chips as your spoon. Go back for seconds.
This quick dinner will keep for up to a week in the fridge, just reheat in the microwave or on stove top.
